To Prepare mescal. From "Apache Pass Cookbook" by Lois Merritt Ward

1 Find a large mescal patch.
2 Team one should use large sticks with chisels taped to the ends to pry off the agave crowns.
3 Team two dig a fire pit in the center of the agave area.
4 Fill the bottom of the pit with oak and mesquite limbs and logs. Then place stones over the wood. Set fire to pit. After pit has turned the stones white hot place wet grass and brush on the stones. Put the agave crowns on the wet grass and top with more wet grass.
5 Cover the pit with fresh dirt to hold in the heat. Let cook for two full days.
