My head is killing me today. Just finished my first attempt at a gluten free pie. It has taught me some very important lessons. First scratch backing gluten free is very similar to Mixed Martial Arts if you make one small mistake you end up knocked out on the floor. So I wanted to make a pumpkin pie. First collect all 26 ingredients and then mix them in different stages at different temperatures using different techniques. Also some tips regarding the use of sweet rice flour, two peaces of parchment paper, and and rolling pin. First don't think you can use all three without making a mess. Second, never underestimate the rolling pin and even though you need three hands, holding the rolling pin in your mouth should be used only as a last resort.
